The artist Tattfoo Tan regularly took pictures of the produce at the Union Square Greenmaket, then using photshop, extracted 88 different colors from photos of the fruits and veggies.  He used these colors to create an enormous palette featuring the nutritious colors and called it the Nature Mapping System.  His public art hangs throughout New York.
